Normally at this time of year I would be writing and saying, nothing is as warming as a bowl of soup in winter, as it
is we have had the mildest autumn for centuries. Anyway, in anticipation that
winter will arrive, here is a soup I enjoy making.
Curried Parsnip &
Apple Soup
2 Medium size Parsnips
1 Onion
1 Cooking Apple
2 ozs Butter
1 oz Flour
1 oz Curry Powder
1Pint Chicken or Vegetable Stock
Peel and cut the parsnips into cubes, peel and chop the onion and
the apple
Fry the onion in the butter, add the curry powder and fry gently
for a couple of minutes, mix in the flour, add the hot stock gradually stirring
all the time. Add the parsnip and the apple simmer for approximately 3/4 of an
hour, blend with hand blender or liquidizer strain through sieve and season to
taste.
