So many people are vegetarian these days, so I try to find recipes
that are quick and easy. Here is one I like to use.

Carnival Cauliflower
Cheese
1 Medium Size Cauliflower
1 Red Pepper
4 ozs Sliced Mushrooms
2 Sticks Celery
1 Pint Milk
2 ozs Butter
2 ozs Flour
2 ozs Tasty Cheddar
Break the cauliflower into florets, and cook in boiling salted
water for five minutes, drain and put to one side.
Cut the pepper and celery into small dice, slice the mushrooms and
cook in a drop of oil or butter.
To make the cheese sauce melt the butter gently in a saucepan stir
in the flour cook together for a couple of minutes, stir in the milk and bring
gently to the boil stirring all the time. Stir in the grated cheddar cheese.
Place the cauliflower and cooked vegetables in an oven-proof dish, pour over
the sauce, top with grated cheddar cheese, brown in an oven or under the grill.
2ozs of macaroni can be used instead of cauliflower if wished.
